Cookies with Rolos
These yummy pumpkin oatmeal cookies are a perfect blend of seasonal spices and sweet, gooey chocolate, featuring a Rolo candy in the center. Ingredients
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup canned pumpkin puree
1 large egg
1 teaspoon vanilla extract
1 1/2 cups old-fashioned oats
24 Rolo candies, unwrapped
Directions
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
4. Beat in the canned pumpkin, egg, and vanilla extract until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until completely combined.
6. Stir in the old-fashioned oats until evenly distributed.
7. Scoop about 1 tablespoon of dough onto a prepared baking sheet, spaced a few inches apart, press a Rolo candy into the center.
8. Bake for 12-14 minutes or until the cookies are golden brown.
9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
