Pumpkin Waffles
As pumpkin enthusiasts, we are always curious to learn about the background and stories behind different foods. Take waffles, for example. Did you know that the modern waffle was first introduced in the United States in the 1700s? Thomas Jefferson even brought an iron waffle maker back from France and served them at the White House. These pumpkin waffles will add a fun twist to the traditional breakfast. Don't be afraid to sprinkle with chocolate chips or pecans and top with whipped butter or maple syrup.
Ingredients
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp each of cinnamon
1 tsp nutmeg
1 tsp ginger
½ tsp salt
1 cup 100% pumpkin puree
2 eggs
¼ melted butter
¼ cup brown sugar
½ cup milk
½ cup buttermilk
Directions
In a medium bowl combine pumpkin, eggs, butter, brown sugar, milk and butter milk
In a separate large bowl mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger and salt.
Being careful not to overmix combine the wet ingredients into the dry ingredients. Your mixture should be pourable. Add a small amount of milk if your mixture is too thick.
Pour batter into your prepared waffle iron and cook as directed by your waffle iron manufacturer.
Serve with sweet whip cream, maple syrup
