Pumpkin Mac and Cheese

Ingredients

12 oz elbow macaroni

2 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups milk

1 cup canned pumpkin puree

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 teaspoon nutmeg

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tablespoons chopped fresh parsley

Directions

1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.

2. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

3. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.

4. Gradually whisk in the milk, stirring constantly until the mixture thickens.

5. Whisk in the pumpkin puree until smooth.

6. Stir in the shredded cheddar cheese and grated Parmesan cheese, and continue to cook and stir until the cheese is melted and the sauce is smooth.

7. Add the nutmeg, salt, and pepper to the cheese sauce, adjusting to your taste.

8. Add the cooked macaroni to the cheese sauce and stir until the macaroni is well coated.

9. Transfer the mac and cheese mixture to the prepared baking dish and spread it out evenly.

10. In a small bowl, combine the panko breadcrumbs and chopped parsley. Sprinkle the breadcrumb mixture over the mac and cheese.

11. Bake for 20-25 minutes or until the top is golden and the cheese is bubbly.

12. Allow the pumpkin mac and cheese to cool for a few minutes before serving.
