

Pumpkin Spice Fudge

Ingredients
2 cups granulated sugar
1/2 cup unsalted butter
2/3 cup evaporated milk
1/2 cup canned pumpkin puree
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups white chocolate chips
1 (7 oz) jar marshmallow creme
1 teaspoon vanilla extract
Optional: Chopped nuts for topping
Directions
1. Line an 8x8 inch square pan with parchment paper, leaving an overhang for easy removal of the fudge.​
2. In a heavy-bottomed saucepan, combine the granulated sugar, unsalted butter, evaporated milk, canned pumpkin puree, ground cinnamon, ground ginger, ground nutmeg, and ground cloves.​
3. Cook the mixture over medium heat, stirring constantly, until it comes to a boil. Once boiling, continue to stir and cook for 10-12 minutes or until a candy thermometer registers 234°F (soft-ball stage).​
4. Remove the saucepan from the heat and quickly stir in the white chocolate chips, marshmallow creme, and vanilla extract until smooth and well combined.​
5. Pour the pumpkin fudge mixture into the prepared pan and spread it out evenly.
6. If desired, sprinkle chopped nuts over the top of the fudge and lightly press them into the surface.
7. Allow the fudge to cool at room temperature for 2-3 hours or until set.
8. Once set, lift the fudge out of the pan using the parchment paper overhang and transfer it to a cutting board.
9. Cut the fudge into squares using a sharp knife.
10. Store the pumpkin spice fudge in an airtight container at room temperature or in the refrigerator.
