

Pumpkin & Honey Empanadas

Ingredients
2 cups canned pumpkin puree
1/2 cup honey
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
2 packs of refrigerated pie crusts (4 crusts total)
1 egg, beaten
Powdered sugar for dusting (optional)
Directions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the pumpkin puree, honey, cinnamon, nutmeg, cloves, and ginger. Mix until well combined.
3. Roll out the pie crusts on a lightly floured surface and cut out circles using round cutter or a small bowl as a guide.
4. Place cut dough evenly in the center of your dough mold.
5. Spoon a small amount of the pumpkin filling onto the center of each circle.
6. Fold mold in half to create a half-moon shape and seal edges.
7. Place the empanadas on the prepared baking sheet. Use a sharp knife to make a small slit on the top of each empanada to vent steam during baking.
8. Brush the empanadas with the beaten egg.
9. Bake for 20-25 minutes or until the crust is golden brown.
10. Allow the empanadas to cool for a few minutes before serving.
11. Dust with powdered sugar if desired before serving.
